Kate Cooper is a senior and staff writer of “The Raider Voice”. While this is her first year as staff, Kate previously contributed to “The Raider Voice” as a freshman. This year, Kate is looking forward to writing about current international issues, and highlighting local businesses, especially those related to the food industry. Outside of journalism, Kate is an avid traveler who enjoys immersing herself in the local culture. Within the school community, Kate is vice president of Key Club and a Model UN team member.

As part of the bakerys rotating seasonal menu, the spinach bourekas (lower left) often make an appearance. Bourekas are popular baked pastries highlighted in Sephardic Jewish and Israeli cuisine, and are usually made with either puff pastry or phyllo dough in a wide variety of shapes and fillings, which are typically either meat, cheese, or spinach. Paired with a side small, bourekas are a perfect option for lunch or dinner.

After much deliberation, the decision to select the Babka bread pudding, served warm with vanilla ice cream, and the halva ice cream (sweetened with date syrup and topped with shredded halva) did not disappoint. Made with sesame flour and honey, halva is a confectionery originating from Persia and the Middle East. The babka makes for an indulgent choice, as it is made with brioche dough with either a chocolate or cinnamon filling.

A hummus sandwich is a better alternative to the traditional ham and cheese as hummus contains healthy fats, protein, and fiber, and could help keep you satisfied for longer periods of time. Ingredients necessary for this quick lunch idea are: 1. Hummus, 1/4cup 2. Whole-grain bread, 2 slices 3. Cucumber, 1 small, slices (Note: The cucumber is not necessary as the sandwich taste the same without it.) 4. Carrot, shredded, 1/2 cup 5. Extra Virgin Oil, 1 tsp Steps to make the sandwich: 1. Apply the hummus on both slices of bread. 2. Top one of the bread slices with the carrot and cucumber. 3. Drizzle the olive oil and cover with the remaining slice of bread. 4. Enjoy!
