A hummus sandwich is a better alternative to the traditional ham and cheese as hummus contains healthy fats, protein, and fiber, and could help keep you satisfied for longer periods of time. 
Ingredients necessary for this quick lunch idea are: 
1. Hummus, 1/4cup 

2. Whole-grain bread, 2 slices 
3. Cucumber, 1 small, slices (Note: The cucumber is not necessary as the sandwich taste the same without it.)
4. Carrot, shredded, 1/2 cup 
5. Extra Virgin Oil, 1 tsp 
Steps to make the sandwich: 
1. Apply the hummus on both slices of bread. 
2. Top one of the bread slices with the carrot and cucumber. 
3. Drizzle the olive oil and cover with the remaining slice of bread. 
4. Enjoy!
