Raider Recipe: Sugared Almond Cookies

Nothing brings in the warm nostalgia of the holiday season better than a fresh-baked batch of festive cookies.  This crowd-pleasing recipe is perfect for family gatherings, or as a companion to a hot cup of cocoa.

 

Ingredients: 

  • 1 cup butter
  • 4 tbsp sugar
  • 2 tbsp vanilla
  • 2 cups flour
  • 2/3 cup finely ground almonds
  • Powdered sugar

Instructions:

1. Mix together butter, sugar, and vanilla. Add flour and ground almonds.

  1. Roll up dough in plastic wrap, shaping it into a 10-in. sausage shape. Refrigerate for at least one hour, until the dough is firm.
  2. Preheat oven to 350°F. Slice dough into 1/4 in. rounds. (Personally, I use  unwaxed dental floss to cut the individual cookies, using a knife on the dough is difficult)
  3. Place cookies on parchment-lined cookie sheets. Bake cookies for 20 minutes or until golden brown. Remove from oven and immediately sprinkle with powdered sugar
  4. Enjoy the seasonal treat!
